How to Melt Chocolate in Microwave

The microwave is great for melting chocolate in small amounts, about 1 cup or less. Any larger amount may run the risk of burning your chocolate.

Be sure to read the instructions on the packaging for how to microwave your chocolate or candy wafers. You’ll most likely have to change the power setting to avoid overcooking. Make sure you’re using a microwave-safe bowl for better heat distribution.

How to Melt Chocolate on Stove

One of the best ways to melt chocolate and candy wafers is in a double boiler. A double boiler uses hot steam, rather than a flame, to melt your chocolate.

To create a double boiler, place a small saucepan filled with about 1 inch of water on the stove. Place your chocolate in a heat-safe bowl that is larger than the mouth of the saucepan. The bowl should not touch the water in the pan.

Turn the heat up to medium-low. As the water boils, the steam will rise and melt your chocolate. This method is great for larger amounts of chocolate, about 1 cup or more, as it is very hard to burn or overcook.

Be extra cautious not to allow steam to come in contact with your chocolate. The water can cause your chocolate to seize, making it unusable. If you notice a lot of steam coming out from around your bowl, either lower the temperature or remove some of the water.
